Not the greatest example here, as you don't always get the extreme highs and lows on tapping vs. holding, but if you go into practice and throw enough pitches, you'll see it. You'll also see the slight difference in the arm speed. (The FB I threw right before that one on a "tap" was 94).

So, I was experimenting earlier today - And usually, when you tap or hold the pitch button, and make your pitch, the pitch feedback you always get is "Very late".
However, if you select your pitch, and hit X/A again right before your pitcher releases the ball, you will get other various feedback such as "just early, good, just late etc "
I think this has an impact on the quality of your pitches. And I think shows there is a timing mechanism to classic pitching too.
I usually don't hold the button for full velocity, but I would assume it would work the same. Hold the button until it vibrates, and tap the X/A button again at release point.
I'll keep doing some more testing. But just wanted to share my findings
Edit: It is the same sequence for throwing with max effort as well. Select your pitch, hold A/X until you feel your controller vibrate, let go of A/X and tap it again before pitcher releases out of their hand.
