Speaking for myself from a batting perspective, I truly do find the lower movement ratings on breaking balls a lot more realistic and much, much harder to hit. I find a curve with 99 break to be way too easy to spot. It comes out of a lot of pitchers hands and lofts up first, then slowly rolls toward the plate dropping very obviously. I do know that this happens in baseball also. Sometimes you see pitchers throw a curve and their release is off and it goes up and then usually either the hitter gets a great read and takes a serious cut at it or lets it hit the 58 foot mark and waits for the next pitch. However with lower movement on break ratings I find breaking balls way harder to pick up. They break hard and late...and I get fooled a lot. I play on HoF with pitch speed at 8, so maybe that contributes.
While pitching I honestly do not find a lot of movement any more successful than a little movement. Although I do find the cpu easy to K once you get into a groove. If anything, and I'm not trying to stir up crap, I find lower break ratings a bit easier to get K's or spot my pitches with. That could just be me or my sliders or what teams I am facing etc. It could easily just be in my head too.
I have already said a few things about WTNY's edits, both good and bad. Regardless of what I think or thought, I can easily make my own edits as I see fit and I see great results. I also think that if you use his pitch edits and his player edits (he has another thread and it's truly excellent work) you see a much more palatable brand of baseball. The 2 combined with slider tweaks and any edits you want to use, in my experience, have quite literally changed the game. In a hugely positive way. Almost a different game. Not unlike good roster edits for the NBA 2K series, once you find the right mix with The Show, it's like a new title and it's way, way more realistic.
