Regrettably, my HDTV does not support 720p, only 480p and 1080i. HOWEVER, the higher resolution will only smooth out the jaggies some, it won't do much more, so while I can believe that MVP in 720p might appear more aliased than MLB2k5 in 480p, there's no way the faces suddenly improve, or that the presentation differs. The size of your set matters too; I don't play on my 55" HDTV projection set because the jaggies get blown up too much on MOST games. However, on my 38" tube HDTV, the issue is mitigated.
So, when you overstate the graphics on your set for MLB2k5 as "horrible" I'll assume you're playing on a 50"+ set and your complaint is the jaggies.
