I love this question! It's easy to answer because customization and options will take a game far. Don't limit what a hardcore can put in a game realistically or what could draw a casual fan in realistically.
You will have fans who complain and moan but download a created boxer or play for custom titles or organizations. Google a text-sim game called Title Bout Championship Boxing; the depth and options had it as a cult classic for hardcore boxing fans. You drop them into a graphic driven game and it's an instant classic real boxers or not.
