I havent seen this. Still seeing tons of ints on 50 50 deep balls

This has been one of the main things killing the game for me is the WRs not fighting for a ball in coverage and just standing there watching it get picked.

I've been seeing this recently too. It looks like they updated the game or something. That said EA is always 1 step forward 2 steps backwards. The catch while running animation is now overpowered for WR.. even if you have a DB there ready to swat the game puts both players into an animation letting the WR catch the ball.

I was seeing the opposite, more often than not even when I had a step on the DB and I placed the ball perfectly hitting him in stride the DB would knock the ball out.

I don't think you actually need to click on. Instead just hold the possession, aggressive or RAC catch button and the receiver will usually do just that. I'm not a user catch guy myself, but just merely selecting the type of catch the receiver will perform isn't the end of the world.
