I will just wait until the first official roster update comes out from Sega. Usually the updates not only reflect current depth charts, but also adjusted ratings for each of the players. For example, on the first roster update, I would expect Holcomb to start over Couch and for Holcomb to have a higher rating than Couch also.
At least I hope it works out that way (and I hope that we can get the first roster update next week sometime).

Coming a bit late to this thing... The 'Assist' mode applying to all teams is definitely a bummer, mainly because I wanted to be able to 'watch' a game for a team I didn't control like the Super Bowl (not really because I wanted new and improved rosters). Not a huge issue, but once in awhile I like to see that new star rookie in action for another team, or watch a playoff game. One other glitch that shows up in 'GM Mode' (where you watch but don't play) is that on passing plays there's a 'hitch' as the ball crosses the screen for the XBox, ie a noticeable freeze for an instant, which is annoying.
