The best thing you can do it rate their play style after the game and give them a NO SIM rating.
After the game, go to your friends list, then hit the R trigger to bring up recent players. Highlight said cheeser and hit A, then pick "rate play style".
The 2nd thing you can do is add people to your friends list when you come across someone that plays legit. If you're also a sim baller, I'm sure they'd be more than happy to have you on theirs.
Now as far as actually having to play someone like this, pay attention to WHERE they're running to. Some people like to take their 3 step drop, pause, then sprint up the middle. If they do this, pinch your D line pre-snap, and control the FS and put him in the middle behind the LB's. If you see him running up the middle, bring your FS up to meet him.
More often than not, the people I played will manually roll out to one side or the other, wait a sec or two, then sprint forward if there's no coverage. If there IS coverage, they'll try to throw a lob to a WR on a go route. This is the easier cheeser to play. Again, take your FS and park him in the middle behind the LB's. Basically, you'll be QB spying manually. When the QB takes the snap and rolls out, shadow the QB but stay 5 - 7 yards downfield. If he takes off running, start sprinting at him as soon as he hits the line of scrimmage. Hopefully you give him a good hit and force a fumble. However, there's a good chance he'll see you defending his QB run, so he'll opt for the lob. As soon as the ball is thrown, either sprint your FS back to tip (or pick off) the pass, or switch to the CB defending the intended WR and try to tip it.
Also, if you're playing someone who lobs to ONLY Terrell Owens or Peerless Price, use a defensive hot route thing and double up to coverage on him. Put the SS or even a LB on him. Then when he lobs the ball, you can switch to one of two coverage men, or drop your FS back into coverage, and try to tip or pick the pass.
A lot of this is easier said than done, and of course isn't 100% effective. The whole point to either method is to manually QB spy with your FS, but don't overcommit and take yourself out of coverage.Comment

worst part is how people run the qb w/5 wide. The QB is 10 yards down the field and the DB's are STILL covering their receivers. If you do get a good hit on the QB, he will fumble or get injured, which is usually enough to get the other person to quit lolPSN - tc23Comment
