There's a simple solution to that problem that will keep single player interesting: Create two profiles.
I have a profile with which I'm trying to go all the way in career mode, building an uber-golfer. Then I also have a profile with only seven skill points.
When I feel like kicking *** and going for a really low score, I'll use the first profile. When I feel like a real challenge, I'll use the seven-star player.
I'm assuming you're shooting -11 on Advanced. If you're not in Advanced, pull off the training wheels and go there.
If on Advanced, you also can use wind, tee distance and pin placement to increase the challenge. If you're shooting -11 with a 25 golfer with championship tees, hard pin placements, windy conditions (28 mph-plus winds) and rain on Advanced level, then you're really good.
Just a suggestion.

Thanks for the suggestions.. might consider making a 2nd profile. Yes I am playing on Advanced, and love that I have my good days and bad days on the links. No I didn't pull my -11 with windy, rain, I usually struggly when the wind gets up there.
