I've been grilling for awhile but this last summer i got into it deep. A tip that i learned that help me out tremendously is with your charcoal use some hickory wood. or maple wood. its different wood for different types of meat and it makes your food taste great.
I was in the hospital waiting for my wife to give birth and a grill show came on the food channel and they put me on to wood with your charcoal. The summer before that i learned how to marinate my food before grilling on the show and used the Internet and trial & error to perfect my bar-b-QueComment

Q as in real Barbecue is the best. Low and slow smokin is where its at. If you want some good info go to www.bbqu.net. I'm pretty sure there's smokin tips on that webpage. And also, try using more fruit woods like apple, peach, and cherry. Their flavor is a lot more subtle and it really brings an entirely different depth of smoke flavor.Comment

Hickory, mesquite, and oak are your standards, but if your doin somethin like a pork shoulder try throwin in a little applewood(or any fruitwood) I'm tellin u it will be worth the wait.
Also try to get whats called a smoke ring inside of the meat. Its a red ring that appears just below cooked surface of the meat. Its the smokin badge of honor and means that the smoke has actually penetrated the meat.Comment
