Adium is great for instant messaging, as mentioned above.
iBank if you want to run a finance program (quicken for mac is unfortunately garbage).
Quicksilver is great, check it out.

This past weekend is one year to the day, that I have had my Mac. Absolutey love it, couldn't have made a better decision getting it.
Firefox works great. I use Yahoo for messaging. The new beta works great. I like some of the minor details.
Also, you will love Garage Band. I'm still trying to get my hands on Final Cut though.Comment

I'm gonna play devil's advocate and suggest some other alternatives to what other people said:

I use Opera on my Mac. I prefer it slightly to Firefox because its the smallest, the most secure, the fastest, and has all my cool widgets (facebook widget, virtual aquarium, etc). I suggest you try it out, but Firefox is still an EXCELLENT option if you don't like Opera.
I suggest sticking with iChat for your messaging, and downloading an extension called Chax. It basically adds all the features of Adium (like logged chats, tabbed chats, etc) and keeps everything localized into one program.

I don't like Opera have used it enough both on XP and OSX and didn't care for it at all. It's a fast browser but the interface and how it deals with certain websites got on my nerves. One nice thing about Opera is it has built in torrent support.
My browser's are:
1) Firefox
2) Camino

If you can't get your hands on MS Office immediately you could try OpenOffice. I still like MS's product better but OpenOffice gets the job done and its free.
I haven't tried Firefox on the Mac yet since it left a bitter taste in my mouth from the Windows days, but I'm finding Safari to be more than adequate.
And just for skits and giggles, try virtuedesktop to imitate Spaces from Leopard its really cool when you have a laptop and tap the screen...Comment

enjoy...I joined the mac crowd (for work) when i got a supremely sweer MacBook Pro...I recommend Adium and Firefox like others mentioned. Other than Office everything else I dl'ed was more work/development specific.
