Obviously there's way more than I can list, but I'd say if you want shorter series I'd start with:
[spoiler]Samurai Champloo, No Game No Life, The Kawai Complex Guide to Manors and Hostel Behavior, The World God Only Knows, Kill la Kill, My Teen Romantic Comedy SNAFU (2nd season just ended) and Food Wars! Shokugeki no Soma (still broadcasting weekly.)[/spoilers]

For long series I'd say just start on Fairy Tail and/or Hunter x Hunter.

Summer season is starting soon. I'm really looking forward to "Gangsta", which seems like a cross of Black Lagoon and Jormungand. A trailer:

What ubernoob mentioned. I was unsure about linking it due to the fansub bits on it. It's still a great resource though. Cast and staff lists, character information, tags, etc. ANN's Encyclopedia is also a good resource, but I prefer AniDB for ease of information and air dates.
