Props for mentioning the Sleep! Very underrated!
I could list a whole bunch by Dimebag, Mike Ammott, Jake E Lee, Hendrix and John Petrucci that I love. Outside of those guys, if I were going to point to one, I'd say "Colony" by In Flames has a fantastic acoustic solo going into an electric guitar lead. Love that melody.

Yea I just started listening to In Flames like 3 weeks ago, their guitarist is incredible.

In Flames have two lead guitarists (Jesper Stomblad and Bjorn Gelotte) that basically split the solo duties. I'm sure someone who is a bigger fan of the band than I am could probably tell you which is playing what. They don't do it as much anymore, but I always enjoyed their little harmonized pieces together. I've always felt that they were the best duo to come along since Murray and Smith of Maiden.Comment

Too many to think off, don't wanna overheat the brain. Off the top of my head Joe Satriani and basically anything he does. Eric Johnson's "Cliffs Of Dover". Stevie Ray also had alot of cool solos and finally Jimmy Page's solo for "Stairway To Heaven" on The Song Remains The Same soundtrack.Comment

Just wanted to say that I'm pleased to see Mark Knopfler mentioend in here for "Sultans of Swing"... that guy is one of the most underrated guitarists around... such a great fingerpicker playing electric makes for a cool and unique sound. Very understated too, which I love.
