I will name off a few MMO i have played which i feel have more depth than wow:
anarchy online
eq1( which you mentioned)
ultima online
eq2
swg ( pre nge , pre combat upgrade, etc)
eve online
What i mean by depth is that there is more to do than just fight. Most of those other games gave you, for example, crafting which was more involved than what wow offers. Of course this is all opinion and debatable.
Now because wow has less depth, that is what makes the game such a easy introduction for the new gamer getting into MMO's. Granted, the whole world is turned upside down once you hit 60. And although other games also have the same end game problem, you reach that problem much more quickly with wow because of how easy it is to level. I have seen people level a toon from 1 to 60 in 10 days played or less. Thats powerleveing, and they are missing a big chunk of the content no doubt, but you have to admit that wow has to be about the easiest game to level in.
Don't think that i dont like wow though. I enjoy the game for what it is, but my opinion is in order to make it easier for a beginner, they had to sacrifice some of the depth, and what others might look as tedium, in an MMO.
