I guess I'll add Gears of War to the list. I want GRAW for the single player stuff, and co-op would just be an after thought anyway.

The ones I remember:

Gears - Good entertaining co-op, berserkers own.
R6 - Pretty good coop, but not quite as fun as Gears IMO.
GRAW - Sucked compared to R6. Bad framerate and it feels soo much different than the single player.
Halo3 - Never been a huge fan but the coop is pretty fun.
Blazing Angels - I don't like that game very much. Im a stickler for good frame rate.
Kameo - It can be fun if you like that sort of thing, puzzles and whatnot.
Marvel - I enjoyed it, the only co-op that we played through the whole thing aside from Gears.
Splinter Cell Chaos Theory - If it's backwards compatible, I dunno if it is, but it was my favorite one for the XBOX.

Also, check out this game coming out called Borderlands. It was in Game Informer a while back and it's built as a cross between Diablo and a co-op FPS. There was supposed to be like 500,000 weapons to collect. I don't know of the status of it but I assume it's still coming out.

I don't know about Kameo, but this is a great list otherwise. Also worth note: Guitar Hero II & III

Gears and Halo 3 are great local coop games.

Bonus to Halo 3 for allowing up to 4 players in single player.

The best game for co-op is by far Rainbow Six Vegas for the 360 IMO. The terrorist hunt will provide hours and hours of co-op fun. The enemy AI is good and it is really tough to take down 20-30 terrorists with just you and your buddy (but doable if you are good).
