All i've been playing lately is FIFA 09, since it was released a month ago, and totally ignored my "story" games. Of all the Xbox 360 games i currently own:

Finished 100% (ie: either 1000/1000 Gamerpoints, or close enough)
Amped 3
Bully: Scholarship Edition
GTA IV (100% in-game stats, not all GS)
Oblivion + Shivering Isles
Test Drive Unlimited

Finished in some way
Bullet Witch - finished on Easy and Normal
Burnout Paradise - got the highest license but need to do the 90+ remaining events
Call of Duty 3 - finshed on normal
Call of Duty 4 - finished on normal, got half way on Veteran
Gears of War - finished on Casual, got to end of Chapter 4 on Hardcore
Halo 3 - finished on normal and Heroic
PGR 3 - finished the career at Silver level

Unfinished (some i got quite far, most others I played for an hour or two then abandoned)

I get most of my games fairly cheap by the way, either at launch via trade deals for less than half the retail price, or later on in a game's shelf life through crazy price reductions, so i'm not wasting as much money as you might think, but still I have a problem Others like Far Cry 2 and Saints Row 2 i did pay close to full price, but i did so by trading in games i've finished off like Assassin's Creed, Fight Night 3, Bourne Conspiracy, Madden 09 etc (see my Gamertag) so that doesn't bother me, even if it just adds to my backlog of games to finish.

As a 360 gamer, i consider "finishing" certain sports games as getting all feasible achievements from it. FIFA 09 seems like an easily attainable 1000, whereas FIFA 08 for example is finished for me at say 500 points.

I'm also not even considering my ~30 XBL Arcade games or my Wii games, though my Wii is pretty much multiplayer only (except for Mario Galaxy which i finished 100%, and Corruption which is another unfinished game for me).

I don't know how you guys can play so many games. The only next-gen games I own right now are:

PS3: GTA IV (borrowing Uncharted from a friend).
360: Oblivion, LEGO Star Wars: Complete Saga, CHOOPS 2k8

And I still don't even have much time to play those few games...

I still haven't finished Halo 3, GTA IV or The Simpsons Game.

I'd really like to try and max out the achievements on what games I have left. It's impossible for some games because they require online/co-op play and I doubt some people are even playing them anymore.

Well, 1.03 (trophies) just dropped, so it looks like it's back to GTA IV for me now! Since they're not retroactive, maybe I can play through the whole thing in a decent amount of time this go-around.

(I'm sure it's been noted in the GTAIV thread already, but would you believe I STILL haven't opened that thread since release day for fear of spoilerizing myself?)

I finished two games this weekend. Star Wars: Force Unleashed and Fable II. I plan on playing through both of them again...mostly for achievements. I need to get my gamerscore back up after switching to a brand new Xbox Live account (renamed to my old gamertag...I know...I'm stupid...long story).

Damn TJ, you finished Fable 2 already!!!!

I am still working on Dead Space, GTA-IV, and SR2 at the moment. But I can't seem to put down NBA 2k9.

Think I'm gonna try to beat Fable 2 beore Fallout 3. Might get Fallout 3 on Friday. Got tomorrow and Friday off, so it's definately do able.

Add another 2 coming up on my list of unfinished games.

Fallout 3 is AMAZING so it will get finished. I finished oblivion twice.

I can never seem to finish any of the Splinter Cells. They always just got boring to me.

Others include:
Lost Oddysey-Couldn't get past the tower.
FFX-Kept having to start over. I finally got to fight the guy inside sin but could never beat him.
FF8-I think this was the one with the gardens, kept getting beat by a GF.
FF7-Sepheroth, last boss. OMG, I dont know how you beat him.

Cant really think of anymore.

Ended up getting Fallout 3 at midnight, so I won't be finishing Fable 2 anytime soon.
