I think the thing I'm most excited about is the random interactions and NPCs. They just seem SO organic.
A couple of the cool things I've read/watched from impression videos/tweets regarding random interactions:
Arthur meandering down a path, and he sees a horse with a lantern, without a rider, on the side of the path. Arthur spots a man in some tall grass not too far away from the horse, crouched down with his gun drawn (not at Arthur). Arthur calls out to the man, asking what he's doing. The man is annoyed and quickly tells Arthur to go away. Arthur obliges and starts trotting away on his horse. Then a few seconds later, a shot rings out. The man calls back out to Arthur, now in a much better mood "Wooo! Did you see that shot?!" Arthur walks back up to the man, who is now skinning a coyote. Arthur compliments him on the shot, and the man replied humbly, just stating that he needed to get his dinner for the night. He walks up to his horse and stuffs the skin in his saddlebag (all this detail is visible), and bids Arthur farewell.... The guy tweeting this out said it felt like such a real and organic moment. He could have stolen the guy's horse, or held him up at gunpoint to get the pelt from him, but in the end, he just decided to have that little moment with a guy out looking for his dinner.
Little nuanced stuff like that are what has me SO excited for this game. Apparently the world, and the people inhabiting it, just have so much depth.
The random encounters in RDR1 were cool at the time, but looking back on them as I do a second play through, they're basically all scripted "Hey mister! That man stole my horse! Go get 'em!", or random NPCs with one line of dialogue.
