Because other then mesquite, you have apple, cherry wood and some others. So you really got to know what you are doing and it is a trial and error thing to determine what wood flavor taste good with what type of meat.
You hit this subject right on. I have been a regular on the grill every weekend for the past 3 years during the spring-summer. I have tried alot and there are certain things that just dont go good together. I love Charcoal and wood together. However, alot of people will smoke meat to long which will dry it out . You must know what wood to use with certain meats and know how long to smoke it.
    atleast..Its not Delaware

      Propane.

If you want wood flavoring, cook your meat on a wood plank. It adds the flavoring and is still quick and easy. I usually cook salmon on the wood planks.

I'd love to use charcoal or wood, but 9 times out of 10, I don't have the time for it. Propane grill on the back porch for me.

what he said, but I gotta admit, if I was a griller I'd use charcoal for burgers and steaks and that stuff. If you want a better smoky taste use wood.

Charcoal, with or w/out hickory/mesquite. Just as long as it's not gas.

Propane on the weekdays and charcoal on the weekends. It also depends on what I'm cooking. I almost always cook my steaks (primarly ribeyes) on my gas grill. I have an infrared seer burner that does wonderful things to my ribeyes...seers the outside to seal in the juices. 1 minute on each side on the seer burner and 2-3 on the regular grill with Morton's Cajun Ribeye recipe is pure heaven.

As long as you are using a Weber Grill, you are the man.

At my condo complex (and a lot of condo/apartment complexes around) you can't have your own grill on your patios (fire hazard). I just end up using the free propane grills they have, it's quick and easy. We have a few of the charcoal grills I could use, but I'm only one person and not gonna take the hour it takes to get a charcoal grill up and running just because I want a few burgers.

Yeah, wood/charcoal tastes a bit better, but only if you're doing massive amounts of grilling is it worth it IMO.

                        It depends.

We've got an outdoor kitchen at my house with a large built in Viking grill, it's propane, and we'll use propane a lot because it's just easier.

Charcoal and wood give the food a more distinct flavor, which one is better depends on the taste you want.

A "true griller" can use whatever the hell he wants to grill.

I would love to use charcoal but I don't have the patience. Setting up true, multi-layered zones, getting an even cooking surface, etc. just takes too much time. I like the convenience of a gas grill.

While I've never claimed to be a grill god, it is something I do on a weekly basis year round and greatly enjoy. Nothing beats a hunk of cow on the fire, cooked to a nice medium rare, a cold beer, and good company.

                            Mesquite Wood

Although we usually use propane unless we are cooking something really big. My brother's gf's dad is a champion cooker. We have one of his old grills that you tow and will throw a couple slabs of ribs and a briscuit on there from time to time. It takes hours and hours to cook so its usually only holidays.

Well,in terms of the wood, generally Mesquite is best with beef and game.
Hickory for pork and chicken,Apple for chicken and fish.
Generally, the stronger wood for the stronger meats.

Hmmm I don't think I ever grilled just for a few items. Everytime I grill, I cook a lot of meat. Usually be chicken, ribs, kobe steak, deer steak, hotlinks, italian sausage, shrimp, steak burgers.
