There is some restaurant I keep seeing that has chicken fried steak (maybe it is just fried chicken tenderloin), but they put honey on it, which is just wrong. Has to be gravy. If it is actually chicken tenderloin, then they're good. I haven't seen it in awhile and don't feel like looking it up.

And this afternoon, I will be making homemade NY style pizza. I usually make thicker crust and deep dish so hopefully I can get it thin enough.

Be sure to order that with a side of Nitroglycerin Pills.

Speaking of angina producing food, looks like oyster stew for me @ lunch.

Cold water for the dough is the secret.

                      My daily morning shake:

                      10 oz. 1% Milk
                      few ice cubes
                      one whole Banana
                      1 tbsp natural Peanut Butter
2 scoops ON Banana Cream Casein
                      1 scoop ON Powdered Glutamine

                      It's that good.

Yeast won't work in cold water, dough. Didn't need it any way. Night in the fridge and I got a good ~16 in crust out of it.

Only ADY (active dry yeast) needs to be pre-hydrated in warm water, compressed yeast needs no hydration you can just mix it into the flour, IDY (instant dry yeast) can also be mixed directly with flour (unless the mix time is less than 4 minutes).

It does work in cold water its just slow acting. Its generally used when you refrigerate the dough overnight. It also helps with keeping it from rising to much. Buts its all relative to your tastes. Its hard to make a NY style imo.

Making pizza on OS 101, it is all about the dough and type of yeast. Got to know your yeast. Hmmm, these posts need Chef Matt input.
