    I'm more of a Chicago style guy if I am going through the trouble, since there's no good Chicago style places in town.

      Yeah there is no Chicago style places here either, but I am lucky enough to have one of the best NY style places here I have ever tasted.

        We use instant dry active yeast and warm water for day of service crust. But if we're prepping a day in advance, as Pvarck said, we use active dry yeast and cold water. It helps my team control the rise much better. Depending on the action we can move our rack to desirable temperatures to either keep the rise slow or speed it up.

          I use active dry yeast, but good to know the cold water would have been fine overnight. The reicpe I was following had a rising step prior to refrigeration so I doubt it would have risen in that period of time had I used cold water. Worth a test at least for next time.

                Last night I was really drunk and wanted a sandwich. I didn't have any lunchmeat in the house so I made a sandwich with peanut butter, dorritos, and swiss cheese on it. It was terrible, no idea what was going through my head but it sounded like it would be good at the time.

                  Just crushed a steak, fried onion, tomato, and pickle sandwich. Should've went large because that was baaaaangin'. But I'm probably better off this way, headed off to job #2 for 5 hours. Somehow survived last night with a beast of a burrito brewing in the ol' bowels.

                      This was my planned dinner for the evening... Made fried pickles and ribs, but during the 3 hours it took the ribs to cook, I ate the whole plate of fried pickles and drank beer... No longer had the appetite for a rack of ribs. All I know is my lunch tomorrow is going to be majestic.

                        Pass that lunch on to me. All it took was some pickles and beer and you were full?

                        Come on, man! Though as someone who grew up in Memphis, it might not live up to my standards.

                          Haha nah I wasn't necessarily full, but it was to the point I didn't think I'd be able to down a rack and would hate to stop in the middle. Plus it was 11 at night by the time they finished so I just packed em up and called it a night.
