We use instant dry active yeast and warm water for day of service crust. But if we're prepping a day in advance, as Pvarck said, we use active dry yeast and cold water. It helps my team control the rise much better. Last night I was really drunk and wanted a sandwich. I didn't have any lunchmeat in the house so I made a sandwich with peanut butter, dorritos, and swiss cheese on it. It was terrible, no idea what was going through my head but it sounded like it would be good at the time.Comment

This was my planned dinner for the evening... Made fried pickles and ribs, but during the 3 hours it took the ribs to cook, I ate the whole plate of fried pickles and drank beer... No longer had the appetite for a rack of ribs. All I know is my lunch tomorrow is going to be majestic.

Haha nah I wasn't necessarily full, but it was to the point I didn't think I'd be able to down a rack and would hate to stop in the middle. Plus it was 11 at night by the time they finished so I just packed em up and called it a night.Comment
