Yep, I have one of those timers already for indoor cooking... should make it easy for me. I'll probably get to work on this next weekend...

Any questions man, just hit me up. Only reason I know so much about it is because I just did all these mods last year. So it all still is very fresh.

Thanks, I was really trying to figure out what the butt was. I don't know much when it come to this kind of subject. Though I do love to eat BBQ stuff.

So you eat BBQ but don't know exactly what kind of or where on the animal what you just ate come from ???????

Man you better not go to the deep country south or the country mountain regions of the USA eating some BBQ then. Got to be careful about that.

Before you end up eating some bbq'ed pig ears sammiches

Because I got some relatives and friends that will bbq up some pig ears, ham hocks, squirrel, raccoon, possum and goat.

I am a California boy. I just eat the cook meat. I don't really have to worry about that here.

I tend to use many different flavors

Turkey, Chicken and other birds like Duck. I like using Apple wood chips. It is a very mellow somewhat sweet flavor. But sits well with poultry.

For cuts of meat such as ribs, butt, back strap, etc. Beef and Pork I use a array of different woods. Hickory, Mesquite, and Oak. All three of these woods have very strong flavors. So you don't need to use much of it or your meat might get a bitter flavor.

Pecan is one of my most used. Mainly because pecan trees are everywhere down here. So getting the wood is FREE and is easy. It has a great flavor. My favorite of all smoking wood.

Grapefruit wood is another I use because I have a large grapefruit tree. So all it requires is me taking a branch or two and good to go. I fine it is great for fish or poultry. Sweet, bitter flavor. But a nice addition.

I am about to get a year worth of smoking wood from my Grapefruit tree. The tree is in need of trimming up because the fruit is starting to pull down the branches. So every year I trim the tree to make for easy cutting around. So this time next year I will have plenty of seasoned grapefruit wood.

Well, I ended up going with the Weber Smoky Mountain Cooker. It arrvies today and was 1/3 price of the BGE. Probably going to break it in this weekend with some pork butt.

Yea I saw you post it in the recent bought things. I was asking what made you choose the webber. I am guessing price was a big factor.

Should be a great smoker though. Congrats Fish

Price was pretty much the deciding factor.
