    To my OS brethren... I need to learn to GRILL!

    I need help, guys.

    I bought a $300 barbeque grill last summer and sadly, I have never even used it.

    It HAS been used, but my wife has been the one doing the grilling. Or, if we have friends over, one of them will take the duties of grilling up the burgers.

    Sadly, I'm not joking. I don't know how to grill meat and I need to learn how.

    I know for a fact that we have some true grill masters here on OS. What advice can you give me? I want to be grilling my own meat this summer when we have some gatherings and I have a long way to go.

    Share your tips, tricks, or anything else. I need to learn this very important skill as soon as possible.

    I'm in the same boat as you. I know you'll get some good advice in this thread. Practice makes perfect. So i suggest you take as much advice as you can and practice before the big day.

      Absolutely.

      And to me, grilling is one of the many things that every father should pass on to their son(s). My second son will be born in August, and I want them to know how to grill some meat. For as awesome as my dad is, that's something that he never took the time to show me how to do.

      It should be a rite of passage!

        I grew up with a single mom so i either had to learn most "manly" things or survive without. To this day i can't drive a stick or change my own oil.

        I learn as i go as far as cars go. If i heard that noise before i'll know what to do.

            There are several existing threads for grilling. Search "grill" and I think there are 3 on the first page alone. Would link, but I am on osatwork and I don't think everyone uses that.

              Some basic tips:
              1. Leave the grill lid closed as much as possible
              2. Generally, you only want to flip the meat once.
              3. Don't poke the meat with a fork or you will lose juices. Use tongs or a turner/spatula.
              4. Before the eating, let the meat rest at least 5 minutes to allow the juices to settle. Remember that the meat will continue to cook during this time so pull it off the grill just before it reaches your desired "doneness".
              5. When cooking steaks, allow the meat to come to room temperature before cooking. This could take 30-45 minutes.


              This is also some great info on Weber.com about direct/indirect grilling and cooking times for various foods.

                  These are great tips, pretty much all I follow when grilling steaks or burgers.

                  I also have a thermometer that I use to check the internal temperature while grilling (though as I grill I get a better innate sense of when something's done).

                  Most of it's just waiting, grilling isn't that tough. Just buy some burgers, season them, and give it a shot.

                  When I started grilling steaks I didn't know what I was doing, but with the above advice you'll do just fine. Tough to really screw it up, unless you completely burn the steaks lol

                    Any advice on chicken wings?

                    When I do them...they seem to be cooked on the outside but not completely on the inside. How do you find that happy medium because I like the charred outsides and skin.

                    I'm not into thermometers because I don't like poking the meat which causes the juices to leak out.

                    Any work arounds?

                        You can parboil the wings first and then season them if desired and throw them on the grill to crisp them up. Toss 'em in some buffalo sauce and enjoy.

                          Cooking it too fast. Don't put it directly over the flame or if you have a grill where you can raise and lower the racks, raise the rack up. That way it will cook slower.

                            Grilling is easy and fun.

                            First make sure you have something cold to drink and a buddy over.

                            Next the most important part is the quality of the meat you are cooking.

                            Burgers are best on Iron skillet imo. 85-91% ground chuck, sirloin, or bison.

                            For steaks I prefer .5-1 inch thick cuts of aged choice/prime/grass fed/beef/bison. Sprouts/Wholefoods/Central market/nolan ryan/farmers markets usually have the finest cuts.

                            I use charcoal from natural wood.


                            Get the fire started after about 20 min it should be ready to go. Then put your slowest/biggest cuts on first. I like mine med well, so thats about 7 min each side give or take.

                            I season mine with Coarse Sea Salt. Sometimes pepper but not needed. I also add a little grapeseed oil just to let the fat crisp up around the edges.

                            With chicken its best to use a meat thermometer. It only pokes a small hole in the meat and it will still have flavor.

                            P.S. I also recommend a meat tenderizer. they cost about 20 bucks but it is well worth it. :0

                              I'm good on the grill with some things but not so great at others. Like I can't stand cooking burgers on the grill they just don't come out good to me. Now on the other hand I can make you some of the juciest skinless bbq chicken breast you ever had off a grill.
