    All i do in the summer is grill or smoke meats. I like grilling veggies too. Or sometimes we will butter corn then fold the husk back over the butter and grill them like that. Smoked em before too. They come out good smoked.

    Or just strip the husk and wrap corn in tin foil with mad butter/salt/pepp.

    As for meats just trust your instinct. Find out what meats to cook on or off flame.

      I shudder when I'm over at my in-laws and he's cooking burgers and he mercilessly pushes down the spatula on the meat over and over and over again. Watching all that beautiful juice come out of the burgers makes my heart sink.

        If you want to become good at grilling also knowing the difference between direct heat and indirect heat is important.

            Damn Shame!...people do this because the burgers swell up and instead of a patty, you get a burger ball.

            Easy solution is to take your thumb and press it down in the middle of the patty (even roll it a bit to widen the divot). This will reduce the swelling pretty considerably.

            A few other tips...if you get good quality meats (especially beef), you don't need too add a lot of seasoning, some course salt, some pepper and a little oil (I prefer olive) on the outside is all you need.

            On some of the leaner cuts (sirloin), I prefer to marinade the steaks.

            Others have mentioned direct vs. indirect heat. When cooking steak, you want to sear the outside of the meat to seal in all the juices. Throw the steak on the hottest part of the grill for about 45 second to a minute each side. This should really sear the meat. Then move it away from the coal / heat source and cook until your preferred done-ness.

              When I'm grilling steak or chicken I prefer my meat to be the bone in variety. Bone in, skin on chicken breasts are especially good compared to their boneless skinless counter parts. The bone adds flavor and are also an insulator of sorts and help widen the cooking window and lessen the chance of over cooking.

              Depending on the thickness of the cut and the desired doneness many steaks don't need any indirect heat. I grill 3/4 inch cuts as high as my grill will go for 5 minutes on one side 4 on the other. Perfect medium rare every time.

              Which brings up another point. All grills are not created equal. Some can put out some serious heat and some just don't. Also, every grill I've owned has a hot zone (and it's not usually the center of the grill like you would think). These take time to learn and can make a difference in the final product. A steak cooked in the hot zone the whole time will turn out differently then steaks cooked out side of it.

                The bone really does hold a lot of the flavor in the meat.

                I feel the same way, especially with chicken wings.
