      Used this method and recipe as a base: https://www.traegergrills.com/recipe...baby-back-ribs

      Maple/hickory/cherry wood blend. Seasoning rub with mustard, apple juice and Worcestershire overnight. Today went 3 hours at 180, foiled up with butter, honey, brown sugar, apple juice for another 2 hours at 225 (meat down), sauced with Stubbs and cranked to 250 for a final hour (meat down).

      Came out juicy with a gnarly smoke ring so for a first timer, I am proud of my work. Nice crisp on top — the ends were absolute caramelized bark 🤤

      We also grabbed thick cut bacon so we’re gonna candy some of that up with maple syrup and brown sugar in the next few days. Got applewood for that one.

      Smoked salmon over alder wood is next on my list.

              Did you smoke the steaks? I've always sort of wondered what that would taste like, but I've never actually done it. Looks great either way!

                I've recently looked up reverse searing steak on the pellet grill. I've seen a lot of good reviews.

                  Yeah, it's the only way we eat them. I sucked making steaks on propane, but I kill it on the pellet grill.

                  15 minutes at 250. Check temps. If at like 120 pull them off, set grill to 400 and open up the flame cover or whatever your grill has. Once at 400, put each steak over flame for 60 seconds per side. Rotate them halfway through for some grill marks.

                  Done.

                  Things get adjusted a little if they are thicker or thinner, but it's so simple it's easy to adjust for that.

                  These I seared a little longer because they are a bit thicker than we usually get.

                    I never intended to use the smoker like this, but it’s so convenient. It’s basically a flavored convection oven. But like, the best oven ever.

                    I’ve always been a charcoal guy. I still am and still have it. But it’s much more involved to make sure things aren’t burning and everything comes out right. I found the smoked steaks were a nice cross between grilled (you get some marks) and oven-baked. You can get a perfect cook while retaining the juice, but you don’t get the nice crust on the outside of an open flame. Burgers will probably always go on the charcoal and steaks will be a toss up for me.

                    Mestevo’s strategy is right, but it would be a pain in the butt or impossible with the smoker I’m using (Traeger Pro 22) so I probably would do one or the other.

                    Since it’s like 20-25 minutes, you’re not gonna get the stronger smoke flavor or the crust a long smoke creates, but it’s a great, easy, convenient technique. And you get to be outside and drink beer.

                      What grills/smokers would you guys recommend if I want to move away from charcoal and not use gas?

                      I'm wanting to upgrade and use a more environmentally friendly heat source within the next year or so. Plus, we're looking to move so figured that'd be a good time to offload and upgrade.

                      Anymore I typically smoke most things unless it's a burger or steak, but will grill sides when applicable.

                      I currently have a Char-Griller barrel grill and a small Weber. Both are used for smoking depending on the size of meat.

                        Maybe look into lump charcoal instead of briquettes?

                          I got a no-frills cabinet-style propane gas smoker (Masterbuilt....which is hilariously named, given the generally average construction quality), and it's been fun to play around with it. I wanted an electric smoker because that's by far the most idiot-proof (in theory), but my interwebs research suggested to me that the power elements fail pretty frequently, and then you've just got a big metal cabinet that doesn't do anything taking up space, so...I wasn't pumped about that prospect.

                          But I like the propane smoker. The gas is just used to provide a constant heat source, and you throw wood chips/chunks in the bottom for a constant smoke. It's not the 'purest' or the best, but I thought it was a nice compromise between the 'real deal' and noob-electric. It still requires a lot of trial-and-error, though. I'm anxious to get back at it with some more experimentation.

                                This thing is great! Did a brisket and pork butt (same time) a couple weeks ago.

                                This weekend did reverse seared steaks. Probably the best I've made. Set it to 225 and took them up to 125°. Took them off. Cranked it to 500. It got there in about 2-3 minutes. Seared for about a minute total and it was phenomenal. Had splurged on some very nice looking prime steaks in honor of the first cook.
