    I was gonna say "braise" too

    I apprenticed at a prominent steak house here in Fresno for a year. They didn't have a BBQ so the chef would "braise" his ribs in stock and beer. Then he'd take a pouch of hickory chips and toss them in a roasting oven and "smoke" them for about an hour.

    They were actually a pretty big hit on the menu.

    But their steaks were where it was at.

      Looks good future! Definitely go with the chunk over chips. I get mine at the academy and Publix of all places has a nice selection at a good price too.

        On the boil top, yea I was thinking same thing waste of good beer and ribs. If I'm gonna do the ribs I'm gonna do them properly lol

        I also get my wood chunks at academy or when I go hunting in the woods

        Think I'm going to run and pick up something to do on the pit. If I do pictures to follow.

          Almost spit beer out of my nose on that one... Funny but true. IMO, you are better off using some liquid smoke and a nice rub and baking them in the oven wrapped in foil low and slow for a 3 or 4 hours then boiling them.

                  Have a few filet's getting up to room temp while I got my charcoal getting ready. Last big meal before I start my Insanity workout tomorrow.
