What formations would you add to a custom playbook to make a realistic Gators playbook?

Personally, I would go with what the game has for the Gators, since the 06 Utah playbook may reflect the preferences of the new coach.

If you have the 05 version, go look at Utah's playbook

I don't like Utah's or Florida's playbook. Alabama's is ok. I like a mixture of pass and run formations. I doubt Florida will be running exclusively out of Shotgun formations this season.
