...what sort of things would you change/revamp?

Me Personally:

Team Specific Defensive Playbooks: Probably a stretch here, but if they can do it for offense they can do it for defense. Maybe just for a few teams.
For Example: Nebraska is going to be running a new defense this year, the Peso Defense, our new base package. It's basically a 4-3 with one linebacker being the nickelback, to utilize our personnel.

More Specific Positions: Instead of ROLB and LOLB, I'd like to see Sam and Will (Strongside and Weakside) Linebackers. Also maybe a NT for 3-4 schemes. Possibly separate CB into RCB and LCB as well.

Punt Return BLOCKING: Something that has been lacking for a while has been solid punt return blocking. This may fit better into Special Teams, but it's still a necessity.

And...of course, better DB coverage. As it stands now it's shameful.

Adding these features would completely refresh the series. It would ad a much needed balance and a sense of realism.

there needs to be some assignment defense... especially in the secondary. I want to be able to assign my CB's to specific WR's when in man coverage.

this functionality is critical now with formation subs on offense.... I never want to see my 3rd or 4th CB on a #1 WR that is working from the Slot all the time.

EXACTLY

It was such a pain rearranging the depth chart every game just to cover Jordan Shipley against my friend. I'd put my #1 CB at Nickel (3rd CB) then he'd just shift Shipley over in an offensive package onto my other CB.

I want blitzes to be easier to run in the A/B gap

Too many times i've got a perfect jump but there was so much trash created by the OL/DL interaction that i got stuck.

This was in Madden last year was it not?

yea it's been in Madden for years... but never NCAA.
