How do I load 2 profiles at once? Like if I was playing my friend and we want our stats recorded against each other. right now I can only load 1.

it's easy...just have player 2 hit the guide button on the xbox. THen load his gamertag (assuming he brought it over on his memory card). If he doesnt' have a gamertag...he needs to create an offline one on your xbox...then he loads his offline gamertag and you'll be all set.

Me and my buddy was doing that last nite.
