is anyone out there on 360 Live that plays sim ball? I've been playing jokers who play their WRs at QB, go for 2 every time, etc.

I play strictly sim ball, almost to a fault. The only thing I'll do that's considered "cheese" will be to call a corner-back blitz (not nickle-back) more often than not when playing one of those guys who can't seem to stay in the pocket. My gamer tag (I think that's the word for it) is oklahomab.
