I was just curious if I could load teams like Norfolk State, Youngstown, etc., so that I don't have to play the FCS-West Bulldogs

You can, but they don't replace those DI-AA teams. You have to replace the UTEPs and FIUs of the college football world.

This. I recommend not scheduling those FCS generic teams, anyway. Hurts your SOS.
As Perfect Zero said, you can't replace those generic FCS teams, unfortunately.
