Playing my 5 star QB recruit at WR

As Baylor I had Griffen leave after his senior year and was able to sign a beastly 5 star QB. My junior QB is 85 OVL, beast QB is 81 overall. But he has really good receiving stats and is my 3rd best WR. I'm playing him as WR for his freshman year, will it effect how he progresses? Will it be "better" since he's getting more PT, or worse because he's playing out of position?

So long as he is listed as a QB, none whatsoever.

I have a 4th string 92 speed FS who doubles as my wild cat qb. I would put him as a qb full time but his pass stats wouldnt increase in anyway that he could ever be a full starter so why not let him get better at what hes naturally good at.

Should I redshirt him next year since the junior QB will be coming back? Assuming he doesn't progress past/near the junior QB.

It's your call on that. I would red-shirt him to let him play as the starting QB for 3 years instead of 2, and you can always burn the redshirt if your starter gets hurt.

You have to redshirt him because he will be more valueable as 5th year senior QB then a true freshman slot WR. Even though its tough not getting to play with your 5* guy right away you gotta think long term.

I don't know, IRL FSU signed Anquan Boldin as a 5* rated QB and he ended up moving to WR as a true freshman to get on the field and then ended up staying there. If he is a good slot WR I'd keep him there for a year while trying to bulk up my WR corps and then RS him as a true sophomore.
