that's not HS you're choosing which year of college they're in. to simulate getting a transfer student

This is only when creating a player I believe? When creating a recruit in the offseason, I believe they are defaulted to a HS Senior with no option to choose a year (i.e wanting them to be a JUCO).

Does this sound right?

When a CPU coordinator or Head Coach gets hired by a different CPU team, does he take his playbook with him, or is does he use the playbook of the school he is going to?

This. If Georgia Tech hires an offensive coordinator from Texas Tech, they will drop the option in favor of the Air Raid.
