You know what you could do is look through the playbooks and see how many I formations they have.

Historically, the playbooks most populated by I form have been the multiple/pro style looks. Start with LSU. It has usually had the most I of any playbook and is a very multiple look offense, you'll probably find some option in there. Air Force has a bunch of I formation and is a true option offense, so if you want a bunch of option, you want to go Air Force. Michigan State and Georgia are good pro-style books with a lot of I (including Maryland I in MSU's and Power I in UGA's).

Start there, one of those books will have what you need. Be careful with option from the I this year though, it is not very well blocked and not as effective.

I can't speak for the option plays, but Georgia has an extensive I Formation playbook...I use it as my base.
