Bo Jackson just has so much speed and power, I kind of feel bad using him. But then again his back up is Barry Sanders, so it would be only worse LOL.

Is there an option to have each of these "Ultimate" players just go to their original team? For instance, can I play the default Georgia Tech team (with Calvin @ WR) vs the default Auburn team (but with Bo at RB)?

No. You just make one base team and everybody you unlock just go to that base team. And I highly doubt they have cards for all positions on one team.

Not much, just some good blocking from the shotgun (CAN I GET AN AMEN?) and a burst. Playing the game at it's slowest setting is so much fun.
