Is there a way to see other team's players?

Can you see the other teams players and their overall? I'm in career mode and I'd like to know what player to key on for the other team

You have to individually scout each of their players. Each year.

Assign one or all of your scouts to that country, use the search feature filtered by team to find their players, pull up each player and scout them, then wait for the results.

Star players ratings are usually given iirc. It's the lesser known players and the up-and-comers that you have to scout.

You can indeed have a look at an entire team. If you go to "Search players" in the Transfer screen, you can then select the league the team plays in, and then the team. Press "Y", and the whole team pops up in a review screen. Mind you, it does not scout them, simply allows you quick access to the whole team. In this screen you can then select "Scout further" if you have an available scout. I keep one scout free for this very purpose
