There a way to change which ones you fight in?

No. It's one of their insane oversights.


Red-corner fighter has the colored trunks and blue corner has all-black. So in championship bouts you should always let the champion fight on blue, or otherwise you'd be seeing double, which can be really awkward during near-mirrors. Sometimes there's all white, but I don't see a login in it. Apparently, the amateur in charge of that can't figure out how to use pop-up overlays where players can choose.


What you can do is put on the UFC gear for training and enable the "vanity overwrite" in the career gameplay settings. But you'll be wearing the gear during camp, which is not good.
