In that case the person on bottom should look to sneak in a strike of their own, and then make a move after blocking a follow up strike from person in top mount.

Yes, cause your first options should be blocking then attempting to regain half guard followed by giving the back if that doesn't work for you. The arm trap has only worked for him when I punch myself out trying to get the mount KO. You have to wait for the guy on tops stamina to be close to drained to hit it

somtimes the bar fills but the strike still interupts you.

These little grappling minigames need to go. The whole logic of the ground game is twisted and completely separate from reality. UD3 wasn't perfect, but at least it had ref standups you could fight for and dodging strikes from the bottom.
