Granted, it does sound as though there are some issues, especially in the speed of the outfielders, but could it be that being strong on defense is a skill that you have to learn similar learning the skill of hitting. In most games like HH you stand in the middle of the circle and you catch the ball or the game decides that it is time for you to "make" an error. In ASB the honus is on you and you have to judge the ball for yourself, similar to that in baseball. You're given a circle as an aid but aside from that it is up to you.
Major League players misjudge balls all the time and yea that is very frustrating, similar to when you think you have the ball and it slips past your guy. As I have said before on this site I am a Blue Jays fan and let me tell you Shannon Stewart cannot judge fly balls too well. I'm sure fans of baseball can think of plenty of instances where an outfielder on their team has botched an easy fly ball or line drive and it results in extra bases and runs.
I have heard complaints about the camera view as well and this is a beef of mine also. Different camera angles would be nice so you could at least pick and choose. But in terms of defense I prefer the challenge that ASB offers rather than just standing in a cirlce and waiting to catch the ball.
