I think the biggest aspect about the game that makes it the holy grail that people worship is that it found a way to be both FUN, and held serious care towards the hardcore MMA fan. MMA is a complex sport and UD3 has its flaws, but if you wanted a game that made you felt as if you were in MMA, and a game that gave you a ******* blast while doing so, this was it. Fighter uniqueness was incredible. GSP stood, blocked, shot doubles, jabbed, and felt like GSP.
Fighting gameplans and smart tactical approaches were always rewarded. Cockiness was also punished, lord knows how many subs I've been hit with because I emptied my gas take on a damaged opponent. All of it was fun and easy to grasp yet deep enough to hit some learning curves.
The entire game felt like it was made for the hardcore fan and the casuals second. Because of this it was given universal praise. There definitely is some nostalgia affecting our vision but many of us also keep crawling back to UD3 again and again. It just feels like a complete game that had our interests in the forefront
