I feel like there would be a lot more people who would jump from feature/dumb phone up to a smart phone and go iPhone because of the brand recognition alone. I worked in Best Buy Mobile for almost a year, and I can say that the most asked question was, "When is this carrier going to get the iPhone?" The demand is definitely there.
Higher demand keeps pricing up. Keeps profits up. Good for business. No reason for Apple to let everyone sell it and water down the supply pool.

    Demand up = price up

    Supply up = price down

But Apple controls the supply and demand for its product. If Apple doesn't want to change the price, it won't. They have engrained themselves well enough into today's smartphone market that they don't need to keep up demand to keep customers buying their products. People want an iPhone because they want to be associated with the brand. Adding more carriers would just bring in more cash flow. The iPhone isn't an commodity like gas or milk where supply and demand is always there. A company with the clout of Apple wouldn't be affected by supply and demand like a smaller company would be.
