Take advantage of all oils and potions before a fight. It's especially advantageous to build your character to lean towards alchemy to get those OP bonuses.

Take your time and explore. Potions/decoctions are awesome but can kill you if you don't know what you're doing.
Figure out the type of build you want and upgrade accordingly.
With that said, pay attention to perks that certain armor/swords give you.
Don't **** with Leshens.

I've had this game sitting on my hard drive for like 3 years and finally started playing it, WOW! beautiful Game, Deep, very well done. I think when I initially bought the game it was due to the Hype, but I wasn't into RPGs at the time. However, with playing the last two Assassin's Creed Games and GOD of War, the RPG element was introduced to me and I'm definitely hooked!
Please send any pointers my way...Im on Level 6, so I want to make sure I'm maximizing my build.

Overwhelming is putting it mildly. This game can be very overwhelming even for people who play plenty of RPGs. My advice would be to take it slow, really learn what potions do what, what oils are best for each type of enemy, and learning the best ways/locations to gather the ingredients you need. Prepare before fights, seriously, you're going to learn that preparation is a big part of this game unless you're playing it on an easier difficulty where you can hack and slash your way through anything. Learn to know what to prepare for and how and you'll do well. I personally love gearing up before adventures. It makes the situation feel more important and it immerses me into the world more.“No one is more hated than he who speaks the truth.”
