          What kind of buffalo sauces do people use? I'm not a huge fan of Texas Pete as a hot sauce, I prefer buffalo sauce, but I've never spent time to try to find some in a grocery store.

                  Here's something I do for some quick mini-pizzas that end up being really filling.

                  3 pices of Arabic (Pita) Bread
                  Can of meat spaghetti sauce.
                  Parmesan (or mozzarella, I guess) cheese

                  Take the pieces of bread, spread some spaghetti sauce all around the surface, then take the cheese and sprinkle lots of it evenly on the top.

                  Take them, and toss it in the toaster oven on 350 for about 7-10 minutes each. This allows me to eat one while cooking the next one.

                  Your finished product should be a slightly crunchy yet soft mini pizza-bread. It's really great, and not too unhealthy if you get low-fat cheese.

                    Veal Saltimbocca(Very Easy)

                    Veal filet/cutlets
                    Fresh sage leaves
                    flour
                    prosciutto di parma
                    chicken stock/broth
                    dry white wine
                    Salt & Pepper
                    butter

                    Pound out veal cutlets rather thin. Then with tenderizing side of mallet place a piece of sage leaf onto veal then the prosciutto on top of the sage on veal cutlet and pound into meat being careful not to completely obliterate veal. Very lightly dredge the veal in flour which is seasoned with S&P. Place butter into pan(medium to medium high) with EXTRA VIRGIN Olive oil so butter will have higher smoke point and not burn. Place veal, prosciutto side down first, and pan fry on both sides until golden brown. After cutlets are all cooked remove from pan(so texture will not become soggy) and deglaze with white wine, making sure to scrape up all the bits from the bottom of the pan. Add chicken stock and butter to pan and reduce sauce by almost 50%. Reincorporate veal cutlets and serve

                    Eggs benedict(somewhat time consuming)

                    8 eggs
                    1 lemon
                    1 stick butter
                    cayenne or paprika depending how spicy you like things
                    S&P
                    canadian bacon or good smoked pork shoulder/butt
                    distilled white vinegar

                    Hollandaise Sauce-
                    Whisk 4 egg yolks together in a metal bowl until they become lighter in color and fluffier, add squeeze of lemon juice and a pinch of cayenne or paprika(depending on personal spicyness preference). Melt or clarify(personal preference) 1 stick of butter. Place metal bowl over double boiler and begin to whisk eggs vigorously so they do not cook. As you are whisking SLOWLY add all of the butter until the hollandaise becomes the desired thickness.

                    Poached eggs-
                    Bring water in pot close to a boil(bubbles forming on bottom of the pot) and pour in about 1 tbsp of distilled white vinegar(helps protein in egg coagulate faster so the egg doesnt fall apart). Carefully drop egg in water and cook until its firm but yolk is still mostly liquid.

                    Canadian bacon or smoked pork and assembly-
                    Pan fry bacon/pork and place on toasted english muffin then place poached egg on top then smother with hollandaise and serve

                      This is nothing new but I've always liked some chicken fettucine alfredo.

                      I get about 3 chicken breast (skinless/boneless) and season them with some garlic, garlic pepper and pepper. I let that sit for about 20-30 mins in the fridge. After that, I'll melt some butter in the frying pan (small size) just so there's a thin layer and proceed to cook the chicken.

                      While cooking the chicken, I'll boil some water for the fettucine noodles and once that is done, drain the water and then either cut up some fresh broccoli crowns or grab some frozen/canned peas (your preference) and throw them into the pot with the noodles.

                      Also, while each chicken is finishing and the water is boiling, I'll cut the chicken into small bite sizes and once all the chicken is done, I'll throw it all into pot with the noodles and veggies along with either your "own" alfredo sauce (which isn't very hard) or just use sauce that comes in the jar from the store (quicker).

                      To top it off sometimes I'll have some garlic bread with this also. It's very easy and doesn't take very long.

                          For the Buffalo Sauce... I went to BW3 and got some of their hot sauce and I like it. When I went to Meijer the only Buffalo Sauce I could find was Sweet Baby Rays Buffalo Sauce, but it was good and spicey.

                          I believe they have now in the salad dressing section Ranch/Buffalo Sauce combined. I want to say Kraft makes it.

                            Chili Nachos

                            Chips
                            1 LB of Beef
                            4-5 Hotdogs
                            Garlic
                            1 can of Tomato Sauce
                            Salt
                            Pepper
                            Worchester Sauce
                            Chili powder
                            Cheese

                            Brown the beef, throw the hotdogs, tomato sauce, garlic, worchester, salt, pepper, chili powder together and heat for a little while.

                            Then Broil the everything for a few mintues 4-5 mins. You can add sour cream.

                            Its a great snack or meal and you can cook the meat and sauce and just store it in the fridge and broil it when you want some.

                                While I find it funny that two veal dishes are mere posts apart, since I concocted it tonight I now present one of my FAVORITE dishes...

                                Vitello (Veal) Caprese

                                4-6 cuts of veal for scaloppine (or cutlets pounded ~1/4" thick)...look for a deep pink for the best taste
                                1 cup or so of quality extra virgin olive oil
                                1 cup italian breadcrumbs
                                1/4 cup grated parmesan cheese (fresher is better )
                                1 egg
                                soft buffalo mozzarella cheese (the squishy kind)
                                10 or so leaves fresh basil
                                2 Roma tomatoes, sliced
                                minced (aka finely diced...not PRESSED) garlic
                                aged balsamic vinegar

                                Crack the egg and whisk in a bowl

                                Pour the breadcrumbs and parmesan cheese (mixed) into a shallow dish

                                Heat the olive oil (with garlic if desired) to near smoking heat

                                Dredge the pounded veal in the egg and coat on both sides with the cheese/breadcrumb mixture. [NOTE: You can also coat the veal in flour, then dredge it into the egg, and finally coat in bread crumbs for a crispier preperation.]

                                Cook the veal in oil approximately two minutes on each side until a golden brown (the darker the more well done the veal is, and thus potentially dryer)

                                Drain the veal cutlets on paper towels

                                Pre-heat the broiler

                                Cover a cookie or baking sheet with foil and lay the veal cutlets on top. Layer with slices of Roma tomatoes, leaf basil, and mozzarella cheese (in that order, basil first will tart the veal in an almost licorice fashion )

                                Broil until cheese is a light golden brown

                                Drizzle the tops with balsamic vinegar, which brings out the sweetness of the veal, though be careful since too much will sour the dish

                                Serve with your favorite pasta or a light pepper, onion, and olive oil skilleted penne dish

                                ENJOY!

                                *Of course if you don't like tortured baby cow then thin top round beef or even turkey would work...but I don't recommend it *
