    I fixed myself a couple pounds of teriyaki shrimp. I mixed in a red bell pepper, onion, some water chestnuts and pineapple chunks. It was delicious. I wasn't sure to fix for my side, so instead of going with an Asian salad (should have done that) I just picked up an Asian side pasta packet.

    Not a bad dinner for a college student.

      Was feeling a little gluttonous tonight so I stopped after work and picked up a nice 12 oz. ribeye and some ruby chard. Just seared the steak in a cast iron sillet with salt and pepper (my favorite way to cook a steak by far) and then finished it in the oven. To go along with it, I made some turmeric-oregano potatoes (kind of a creamy sauce with ricotta) and the chard cooked with onion, garlic, and red wine vinegar. Good stuff, haven't had a nice marbled steak in a while.

        Made caramel apple pancakes and cheddar grits last night for dinner.


        I'm getting really good at making pancakes. Next batch will be chocolate chip with powdered sugar on top

          Hell yeah, I've been making waffles lately. The best part is that with less than a cup of flour, 1 separated egg, less than a cup of milk, bit of oil, etc. makes 6 or so waffles. So I've been cooking them until they're pale in the waffle maker and then wrapping them in plastic and freezing to toast up later. They turned out amazing in a toaster oven at work yesterday, still fluffy on the inside and crispy on the outside. The key to really nice waffles is folding in some whipped egg whites that are fairly stiff. This is the recipe I was working from, I've been modifying it slightly, adding spices, etc... my next thing will be a pumpkin or squash waffle (the squash one would be savory): http://www.averagebetty.com/?p=156

            My pumpkin pancakes were amazing. Took normal Bisquick and went crazy with the various spices and while it wasn't like pumpkin pie flavored, you could still taste the pumpkin spice and I added some pure cocoa which set it all off.


            Closer to Christmas I'm going to try some gingerbread pancakes. I figure that won't be too difficult. The caramel apple was a little difficult since I had to slice the caramel cubes and get them to melt in the batter on the griddle. Fine line between perfect and ruined pancakes haha.

              Oxtail pho
              Another big pot of green chile (picked up a beautiful 3 lb. Niman Ranch pork shoulder)
              Iberian ham and potato pizza with tarragon and some kind of fancy cheese still to be determined
              Apple tart of some kind

                  Hell yeah man, one of the best all-purpose meals ever created... I love going and getting some in the mornings occasionally, it's always packed. Same with menudo... there's just something about it that makes the rest of your day good if you eat it in the morning.

                  It'll take about 2 days of cooking off and on since you have to make the broth (basically just cover the oxtails with water and spices, add charred onions and ginger, then let it cook for about 8 hours) one day, cool it, then do the rest of the stuff on the next day. The broth stays good for about 2 weeks and with fresh pho noodles, you can get a fresh hot bowl ready in about 5 minutes once the broth is done. Between that and the green chile I'm going to be in a soup coma by Monday.

                    Some Menudo and carnitas on a Sunday morning is awesome.


                    My sisters are taken a cake decorating class, which means I've been eating alot of cake of late, but at least it taste good.

                      On the docket tonight: big-*** burger. Gonna put some oven-crisped Iberian ham on it (if anything is better than bacon, it truly is this), this awesome Colorado white goat cheddar with ripples of cocoa and chipotle going through it I have in the fridge, tomatoes, caramelized onions, and a little arugula. Probably just roast some potatoes or something to go with it... all I've thought about so far is the burger.

                          Damn man. Do you ever just eat, like, a PB&J sandwich?!

                          Or are your PB&J's carmelized peanuts roasted with sugar dipped in cocoa powder, butter, and molasses topped with homemade raspberry jam that you picked, collected, and mixed yourself...in between two freshly baked rolls toasted at 150 degrees for 5 minutes topped with flour while your doing handstand pushups.

                            Haha, I do eat PB&J somewhat regularly (I just hit mine with a little kosher salt) as well as cereal for dinner on occasion, etc. But if I'm cooking, I'm gonna do it right and lately especially, I've been trying to use good quality ingredients instead of getting main items at King Soopers/Safeway. Butcher/cheese/fish mongers for the win.

                            The burger was pretty ridiculous... start it in a dry cast-iron skillet to get that nice crispy sear on the outside, flip it and finish it in the oven since it was about 2.5" thick... came out perfect. Just served it with some skin-on roasted Yukon potatoes and onions.

                            If you dudes wanna impress the hell out of some ladyfriend, get some individual ramekins and make this easy hot chocolate lava cake.

                            Melt ~5 oz. of chocolate in a metal bowl placed over a saucepan with water in it (double boiler)
                            Add 1 TB of butter and 1 TB of sugar and mix to combine.. the chocolate should still be runny but firmed up a little bit
                            Separate 2 eggs, beat the whites until they are at soft peaks, add 1 TB of sugar, then beat them to stiff peaks (goes faster with a hand mixer, but I just do it with a whisk)
                            Remove the chocolate mixture from the heat and stir in 2 egg yolks
                            Fold in the stiff egg whites with a spatula until the mixture looks fairly uniform

                            Butter the ramekins and sprinkle them with regular sugar
                            Pre-heat the oven to 400 degrees
                            Pour the batter into the ramekins (leave an inch or more of the ramekin showing, as the cakes puff up) and bake for about 12 minutes, or until they stop jiggling jello-style when you shake them.
                            You want the cakes to be a little molten in the center, but the top should be firm.

                            Flip them out onto a plate or just serve in the hot ramekin. It's always good to top them with whipped cream or ice cream, but I just devour them on their own. A variation/addition that I do pretty often is adding cinnamon and chile powder to the mix before pouring it into the ramekins -- adds a nice spice to them.

                            This is what they look like (already cut into it, but they come out looking perfect and round):


                            There is no freaking way a cake with flour in it can get a texture this good... it's like the most moist and fall-apart-in-your-mouth cake you've ever had.
