    Just had true Caribbean barbecue for the first time...DAMN was that stuff good! After some jerk rubbed ribs, pork shoulder, and a hot link, with sides of grilled sweet potatoes with pork and sausage and jerk curry vegetables I'm stuffed! All the meats are smoked and cooked over a wood fire with pimento wood (where allspice berries come from).

    The place I went to in Stillwater, MN even had free roasted jalepenos with sea salt and lime and the finest jicama slaw I've eaten in my life.

    Oh, and the allspice infused Puerto Rican rum with house made grapefruit soda was a strange, biting, sweet and tart cocktail.

      Well, my catering job for the Carrie Underwood photo shoot went well.

      Unfortunately, she walked in and the photographer asked her if she was hungry and she said, "no thanks, I ate at the hotel this morning."

      She did walk in the kitchen and laugh and apologize to us, so that was nice of her. (She is super micro, by the way.)

      She brought her boyfriend, Mike Fisher of the Senators, and he came in the kitchen and talked with us for a second. He reinforced my theory that hockey players seem to be the least jerkish athletes out there.

      Lucky magazine paid us for the service so they picked the menu.

      We prepared a panzanella salad with a basil and white balsamic vinigairette; crostini's with a canellini bean, spinach, and ****ake mushroom topping finished with shaved pecorino romano; stuffed peppers with orzo and ground lamb topped with a san marzano gravy, and a fresh melon salad with mint olive oil and a touch of salt.

          My sister made some awesome zucchini bread, and some chocolate-chip banana bread.

            Just put some pineapple sherbet in the freezer to crystallize a bit, then it goes back into the food processor to smash up the ice crystals further before getting frozen again. Threw a bit of dark rum into it to help the ice crystals stay small and give it a little alcoholic twang to go along with the lime juice... tasted pretty damn good before going into the freezer.

            Tonight for dinner I'm gonna do a pork chop with some tostones (fried plantains) and a warm bell pepper slaw.

            Puffed up like a souffle and were just so decadent and warm/gooey.. oh man. Never making a chocolate cake with flour as long as I live after eating that one. Was like the most moist and fluffy cake I've ever eaten thanks to the egg whites. Try it out if you don't mind whisking egg whites for 20 minutes (I don't have a hand mixer so I did it the old Frenchman way).

                Here's my recipe for potstickers -- try it out sometime: http://hungrytruth.blogspot.com/2009...dumplings.html.

                The first few turn out like crap and will probably burst when cooking, but you'll get the hang of it after 5 or so. Scale that recipe back by about a quarter for a normal appetizer for 4, but that amount of filling made a ridiculous number (like 60) that I froze and ate for 2 months. Not bad for $7 worth of ingredients or so.

                  Just threw a pork shoulder in the smoker. Gonna be changing my shorts in about 10 hrs

                  First time cookin since the new policy of "no more bbq on patio, must use pool grill."

                  Nobody should say anything though. Although there is a gang of smoke, might be hard to miss

                      My lunch today is awesome, even though its my lunch everyday.


                      2 slices of sourdough sandwich bread
                      lots of thinly sliced black forest ham from Target's deli
                      a spoonful of lite peppercorn ranch dressing
                      2 slices of regular swiss


                      toasted on the foreman grill for 6 minutes. freaking delicious.

                        Got roped into doing the meal for my friend's birthday party, which is this crazy Greek murder mystery thing, so naturally the food is all Greek (and vegetarian since she and her boyfriend are hosting). I have made some of this before and some will be my first time (baklava, falafel), but I'm confident that I'll be able to pull it off. Here's the menu:

                        Dolmades (grape leaves stuffed with seasoned rice)
                        Saganaki (flaming cheese)
                        Falafel
                        Spanakopita
                        Moussaka (possibility, it's only gonna happen if I have time)
                        Homemade pita, hummus, and tzatziki
                        Baklava

                        I'll post some pictures I'm sure... damn thing is gonna take away time from me playing the NBA live demo, but it'll probably be worth it.

                          If you're goin Greek, you need to get some lamb chops and some skordolia.

                          If you can (I know fried food doesnt keep well, especially when catering, unless your timing is impecable) make some cottage fries and throw some feta, garlic, and a splash of olive oil on them, and then hit it up with a squeeze of lemoin juice...so good.

                          Good menu, though, hope it goes well stumble.

                            Yeah I wanted to do something with nice spiced lamb so bad, but the birthday girl and her boyfriend (hosts) are both vegetarians, so it was requested to be an all-veggie menu. I'd kill for some lamb sliders on pita or something though. Sacrifices must be made for the hosts' happiness ha.

                            We're gonna fry the falafel there at her house so they're nice and crispy/fresh. I'm able to make the dolmades, baklava, pita, hummus, and tzatziki ahead of time, so that'll make Saturday a bit easier on me.

                            Can't wait for the flaming cheese covered in Ouzo... good times.

                                Here is the stuff I've made in the last few weeks..

                                Zucchini, tomato, and goat cheese tart (my favorite food picture I've taken):


                                Ha, this one's a baby pupusa (like 50 cent piece sized):


                                Baklava for that party (filling was walnuts, sugar, cloves, cardamom, and cinnamon, dusted with pistachios and a spiced honey syrup):


                                Big pile of dolmades (33 in all I think) before cooking, they were vegetarian with herbed rice:


                                Hummus (super easy... chickpeas, garlic, tahini, lemon juice, olive oil, seasoning in a food processor):


                                Open-faced lamb burger on pita w/ goat cheese, tomatoes, arugula, and balsamic-glazed onions.. also, potato-celery root soup:


                                Surprisingly good baguette-style bread made from leftover pita dough:


                                Eggplant parm with a veggie-heavy tomato sauce made mostly with goat cheese and some of that homemade garlic bread:
