    Mmmm... posole.

    Tonight my friend is treating me to a pretty ridiculous meal as my graduation/X-Mas present. We were going to go have the Omakase (Chef's Menu) at our favorite sushi spot, but then I got this message on Facebook. Uh, yeah, we booked it immediately and it's in less than 9 hours:

    TAG presents

          Yeah that one is a collaborative blog with people form another forum that I don't really post on much these days. There are about 10 recipes on there form me though with pictures and all that. Here's the link: http://hungrytruth.blogspot.com/

          I probably will start my own food blog pretty soon. I'm going to start some more adventurous recipes soon like traditional French macarons, so that would be a good time to start one up.

                What would you like to see covered? I plan to explain my basic philosophy and style, which is basically cooking by feel. Basic knife skills/tricks? Spices? Equipment? Let me know and I'll make sure to get everything you want in...

                  Basic equipment, skills, and starter recipes.

                  Most of my kitchen ware sucks because in my Mom's word "Didn't think you'd be doing a lot of cooking." And working as little as I do because of college it has been hard to get better equipment.

                    Okay, cool. I'll definitely cover equipment and give some recommendations for a "starter set" that will have basically everything you need. You can get everything you'll need to cook 95% of recipes for about $150 total (normally name brand).

                        I always just eat them on their own more or less... I cut them on the bias (diagonally) and give them a quick fry in some oil until they're a bit soft. Smash them with the back of a wooden spoon and then re-fry, season them up, and eat. Tostones...

                          Sorry I don't have a recipe, but having been in San Juan last summer and enjoying Mofongo, I can't think of anything better with plantains.

                          I'm so happy there's a place in Minneapolis that offers up Caribbean cuisine. Good to know it wasn't a one time thing, LOL.

                              I usually take em and use a mandolin, or food slicer, slice them about 1/8" thick and fry them skin and all in peanut oil. Make sure the oil is around 375 degrees because once you put the plantains in the temp should drop to around 355...and dont overcrowd the pot because you'll just end up with soggy nastiness.

                              Once they are out of the fryer, hit em with some kosher salt immediately...and you can also make some other spice rubs like chili powder with lime and so on.

                              EDIT-

                              BTW, make sure the plantains are green and under ripened...that way the the starch will not have converted to sugar and they'll fry up beautifully.

                                Had to bump to this up to say that, I love my grill.

                                Even better is that I think I've perfected my grilling skills. Everything comes out the way I want it now, steak, chicken, fish, whatever.

                                Example, the "menu"(more of a snack, I was hungry) for Game 7 tonight, Burger, Tilapia, and Chorizo.
                                Don't you EVER read my blog? It's gotten a lot better.
