Re: Best restaurant chain to get a good steak from?

Unless you have no stove, cooking your own steak is the way to go... seriously. It's almost idiot-proof if you don't mind the temperature being a little off (until you get good at touching it and telling whether it's done or not). I always make mine medium-rare and just poke them with my finger to tell when they're done, but you can also get a quick-read probe thermometer and take the guesswork out completely. Buy a few cheaper steaks and just work at it until you get it right... I REALLY suggest getting the "touch technique" down if you like cooking steaks.

Amazing steak in 10 minutes of work for less than half the price of going out somewhere. Make a simple salad and bake a potato and it's a very easy meal. All you need is a cast iron pan. Not even that really, I make then in any variety of pan aside from non-stick ones and they turn out fine... but cast iron FTW.

And for god's sake, rest the steak! After it's done to your liking (a little under, actually, since they continue cooking after being removed form the heat), tent it on a plate with some foil to keep it warm and don't touch it for 10 minutes. Marinating is a waste also, it's better to season with sauce after cooking, and even more importantly, a dry steak gets a WAY better sear than one that's been sitting in a wet marinade, and a sear is the key to good flavor and texture. A generous coating of Kosher salt and some pepper if you want is all that you really need for a perfect steak, since steaks are about the meat and not the accompaniments.

Even at an expensive gourmet meat shop with super-premium aged Angus Prime beef, the steaks top out around $30/lb. A pound of a real quality steak is enough for a meal for sure and the quality you get doing that will son the hell out of even Ruth's Chris. You can buy the steaks they serve at other places for less than $9.99/lb most times. Cheap steaks aren't necessarily a bad thing (I avoid them due to factory farming practices) as long as you cook them well and they're decently fatty.

Unless you're buying completely insane Wagyu beef, you can get an un****witable steak for $30 that will destroy anything you buy for $100 at a steakhouse. And if you do have a way to get Wagyu, it will REALLY kill the steakhouses, because it's incomparable.

Hmm...well thanks for the info. I usually don't cook steak at home for fear that I won't get it medium rare. So I overcook it and it tastes terrible. I have a meat thermometer at home, how would i use that to ensure it's cooked just enough to eat it and that it's medium rare?

Re: Best restaurant chain to get a good steak from?

It should read right around 130 when you remove the steak for med-rare. Might remove it even a little sooner than that if you like it towards the rare side of med-rare, as the range is 130-140 f. Steak is okay to eat as long as it's above 120 f and isn't spoiled or something... it's rare to get sick from raw steaks, as most cattle diseases end up in the ground beef due to handling, etc.

I assume it's a probe thermometer with a circular dial thing at the top? If you're using that, just make sure that it's as close to the middle of the steak as possible (probing from the side instead of from the top helps get it right) and leave it there for a minute to make sure the reading is correct. I'd stick it in once you've seared the steak on both sides, as it should be getting close.

Very hot pan -- put it on about 6-7/10 on your stove (med-high) and let it pre-heat for at least 10 minutes to get a proper sear. Pat the steak dry, then season it with salt/pepper right before putting it on the pan.

EDIT: Yeah 23, a flat will work okay, though it doesn't get as nice of a crusty sear as you'd get from a cast iron pan or something good and thick that you can get screaming hot. And yeah, the Foreman doesn't do a bad job... those things are just notorious for heating unevenly and they also squeeze all the delicious juice out of your meat, which is fine for cheapo burgers, and whatnot, but I don't like wringing the flavor out of a good steak on those things. Good for a $5 steak, but I would stay away from those with anything you really want to cook right.

Re: Best restaurant chain to get a good steak from?

When I was at a work meeting in Scottsdale, AZ last year my colleagues took me to a place called Mastro's Steak House. All I'll say is that I am VERY happy I didn't have to pay for my dinner. It was INSANELY expensive at $40 for a small filet, plus extra cost for sides. Was it worth it? I personally wouldn't pay that much for a steak, but it was VERY good and cooked perfectly. I guess it's one of those "if you have more money than brains, you might as well go to these outrageously priced steakhouses and get a top notch steak."

To this day, I am still pretty amazed at how great of a steak you can get at Outback Steakhouse. I have had some damn good steaks there and not had to pay out my *** for it.

Ruth's Chris is my favorite, I love how they cook their steaks with a lot of butter in incredibly high temperatures.

Morton's is probably my second favorite.

Outback and Ruth's Chris are two totally different places, each serving their own purpose. If you want a real nice meal with a superb steak (along with a hefty pricetag), then go Ruth's Chris. If you just want a steak and don't want to pay out the *** for it, then go to Outback. I don't really think that the two places, or Morton's and Lonehorn, etc, can really be compared.

Ruth's Chris is definitely the best restaurant steak I've ever had.

                          Mastro's was good but overrated.

I cook my steaks on my grill rather then in a cast iron pan. Crank to old Weber up to 700 degrees and throw the steaks on for a little over 3 minutes a side.

                                Perfect every time!
