Wow. This is exactly how I smoke my ribs. Only difference is that I spray them with apple juice/apple cider vinegar mix every 30 minutes.Couple of questions:
1) What are you using to cook them with?
2) What kind of ribs? Babyback/spare?
3) If baby back, I prefer the 2-2-1 method. 2 Hours smoking, followed by 2 hours smoking wrapped in foil, followed by 1 hour unwrapped with your sauce on it. If spare ribs, 3-2-1 method 225-250 should be your temp.
4) Definitely prefer Lump over any other source
5) Is hickory the only wood you use? I prefer Apple when smoking
6) Do you soak with apple juice every 45 minutes or so?
7) I also use brown sugar during the second stage of cooking. I will sprinkle brown sugar and butter on the ribs before I wrap them in foil.
Smoking/grilling is something that you learn little things as you go, trial and error.
And when I wrap them in foil for those middle 2 hours, I use brown sugar and honey, not butter.
Yes, 6 hours is a long time but the taste is well worth the effort.Comment

This was my second time smoking ribs. I did 4 slabs of spares (probably limit that to 3 next time) stacked 2x2 and smoked with hickory. Rotated and sprayed with apple juice/vinegar every hour until hickory ran out (5hrs) and smoked in the foil w/ sauce for the last hour. This was all per a Weber recipe.
They tasted great and were tender, but not exactly "fall off the bone" like they should be. This was Sunday.
Monday, went to Ashleigh's parents house where there was once again chicken and (baby-back) ribs. Ribs were great - tender and the meat you could pull off with your fingers.
The difference in experience.
I'm pretty content with my beef, steaks, chicken (whether smoked or grilled), but pork is where I need more practice to "perfect." If its ever really perfected anyway.

I need a propane grill (mine was taken out by a storm a year ago and wasn't a priority to replace).
Saw this on Craigslist:
It's a Weber Genesis 2 burner grill...Would this be smarter to get vs. something at Home Depot (DynaGrill or Charbroil types for 150-200 new)?
Part of me worries that it's probably fairly old (it's the older style for sure) and don't know enough about these Webers if the quality is better or not.
Thoughts? I'm just looking anyways because Labor Day is great for sales on grills, so want to get something this fall at some point. Can't really go over 200 ideally though, just too much spending as it is on baby stuff lolNintendo Switch Friend Code: SW-7009-7102-8818Comment

Depending on how much you use it but a charbroil or similar will last you 3-5 years. A weber, just bought my first one, is supposed to last 10+.
So that particular weber, how much it has been used is going to determine how long it'll last. 55 is a good deal of its still got good un-corroded burners and cooking grate.Oakland Athletics San Jose Sharks

Might just get a cheaper one new and roll with it again. My Charbroil lasted 4 years in great shape, just got destroyed by a storm not use.

Has anyone built a grill from scratch like from stone or brick? Thinking of building one by the beach but want to make it look cool.
