Personally I prefer smoked chuck to brisket.
Chuck is easier, brisket can be finicky.
Chuck has less waste, and less shrink, so the end product is cheaper (raw brisket is cheaper).
Chuck is smaller (a 15lb chuck roll takes up less room than the same lb brisket) so I have room on the smoker for more stuff, so I can have a chuck, a butt, a chicken, ABTs, etc all going at the same time.
Chuck makes better pulled beef, and pulled beef is much more versatile than sliced brisket.
It's close, but I find chuck to have a better flavor.
You can't really slice chuck though, it has to be taken to pull or it will be dry. I've sliced chuck and put it in liquid and it was OK, but sliced needs to be brisket. Only briskets I tend to do anymore are corned for pastrami. I've never tried to do a pulled pastrami.Comment

Forgive me if this has been asked already (or point at me laugh and call me nasty names), but what do you guys prefer, gas or charcoal?
For me it depends on what I'm cooking, but there is nothing like catching a whiff in the air of someone grilling on a charcoal grill. I should put that in the pleasures of life thread.Battle.net: xXKING08Xx

For me it depends on what I'm cooking, but there is nothing like catching a whiff in the air of someone grilling on a charcoal grill. I should put that in the pleasures of life thread.

Exactly, if we have people over and I'm cooking hot dogs or something I want done quick, gas is where it's at. Having said that I don't use my little Weber charcoal grill nearly enough. Last year I was horrible with grilling, it was so damn hot all year I think I grilled maybe 5 or 6 times. Thinking of putting a canopy up this year though.
One of my favorite easy things to do is put some brats or some sausages on the grill and have a throw away aluminum container filled with beer, onions, peppers, and tomatoes going at the same time. So easy yet so good.Battle.net: xXKING08Xx

Try getting some brats and boiling them in Guinness first, then pop them on the grill.
Then use some of the leftover Guinness to cook your onions and peppers.Comment

I have a nice gas grill for ease of use, but it would be nice to have a cheaper charcoal one too. The taste isn't a big deal to me, but the charcoal ones are definitely easier.

This is how fell about it too. Just remember too King if your in an apartment and can't go with charcoal you can still get good flavor with a gas grill and a pouch of wood chips.

Heck, you can even go the awesome way if you live an apartment and use your broiler - I did this the other day for the first time (with a strip and a rib eye, about a pound each) and was thoroughly impressed with both how the meat was finished (a better medium rare than expected) and tasted (daresay it came close to the grill).
Bonus points for making my apartment smell delicious for almost the next full day.badComment
