    I just bought 4 lbs of Fresh Tilapia from my butcher.
    I picked them out and he cleaned and fileted them for me.

    Now I just gotta decide how to cook em.

      I'd be curious to hear/read your thought process (or at least what you decide on). Tilapia's one of the best fish imo bc there are so many different things you can do with it, but I still haven't found one thing I'd call a "go to" just yet. I'm still relatively new to cooking fish in general so that's part of it too (besides salmon).

        There is a butcher shop about a 2 minute walk from my apartment. I'm tempted to drop in this weekend. Don't know what the hell I want though.

          I was thinking of marinating in garlic butter and topping with onions and bacon and just popping them in the broiler.
          We just got 10" of snow and Im not trying to shovel out the grill just yet.

            Wrong thread, I know, but baked or broiled would be better for me anyway. Tilapia's pretty light... that won't drown the flavor (apologies for ever saying anything bad about adding bacon)? How long do you marinate fish (for the same reason)?

              Me personally, I don't like to over power fish. I like it simple with fish so at most 30 min marinate.

              Now poultry and meats, ill do 24 hours or more.

                Basically all I do is make the garlic butter, usually with garlic, butter, lemon and S&P, then just dredge the fish in that mix. Lay a slice or 2 of bacon on the fish and top off with some rings of sliced onion. The bacon adds such a wonderful smoke flavor to the fish. It is amazing. I'll take pics, but you guys gotta try it.

                  Would definitely love to see pics. I'm really torn here, lol. I'm just feeling the bacon flavor taking over... but can't ever shut down adding bacon to anything.

                    You make me want to go buy a case of bacon and just wrap everything in it before I cook/eat it.
