    Yeah. I can deal with the cold, but when it's cold and I'm trudging through snow back and forth to the house it's quite a bit daunting. All the while I'm dreaming of grilled and smoked meats. Last year I smoked some peppers and make a batch of pimento cheese. So damn good.

    I'm wondering how smoked Chex Mix would taste (thinking pecan, apple, or a tiny of mesquite) or if it is even possible without getting terribly soggy.

        I just learned about Sous Vide a couple weeks ago and love what it does. Going to have to get me one, think I'm wanting one you use with a App. Didn't know you could cook something for 72 hours till I starting reading about it.

          Yeah, i'm tempted to get one of these. My SIL loves hers that she recently got.

          I need to get a Sous Vide machine too...

          Just haven't wanted to pull the trigger on slightly bigger purchases I might not use a ton.

                Yeah It's just not how I want my steak cooked routinely.

                That and reverse searing may be for some people, but I'm okay with just a good hot grill/fire.

                  I had the same thoughts about a sous vide steak until I made a couple using it.

                  You can basically make high-end steakhouse quality steaks in your house from your couch (minus the searing at the end).

                  And it's not that expensive. You can get 'em for under $100 on Amazon and BBB. I've cooked some other things with it too that have been pretty good like pork loin, lamb chops, etc...

                  I might try some wings for the Super Bowl.

                    I agree nothing beats a searing-hot fire/grill, and the extra taste you get from the charcoal/wood is for sure worth it. But for people who don't have that option, sous vide is a pretty good fall-back option.

                    I have tried a bunch of steaks sous vide and while it works well, I'm never that satisfied with the result (at least, not as satisfied as I'd like to be). For one, as you noted, the sear/char isn't there, and I love that. Even if you sous vide then char, the searing does cook the steak more, so you're undoing some of the temperature control which is the whole point of the sous vide.

                    But more importantly, I think the reason I'm often disappointed with home steaks is that in most places, you simply can't buy the same quality of meat that restaurants get, so no matter what your steak won't be as good. The absolute best steaks are most often sold off to restaurants long before anything gets to your local supermarket or butcher shop, unless you happen to know a butcher personally (and even then...). Also, most people don't have the ability to dry-age their steaks the way a lot of restaurants do, so that makes a difference as well.

                    Having said all that, I've had some darn good steaks at people's homes, and sometimes that's all you need to hit the spot.

                      I usually just get my own steaks cut at the store, but I'm also a guy who can buy a cheap sirloin on a weeknight and be okay with that too.

                      The most I've ever paid for my wife and I (then girlfriend) was $180.00 for two steaks, a few glasses of wine, and a side dish. It was a really nice place, but I doubt I ever do that again.

                      When I think of the Sous Vide I just think of it liquefying my meat (as weird as that may be) and It doesn't sound good in my head. I'm definitely going to get one eventually and try it for myself, but I don't know when that will be.

                        I need to clean out my entire grill. Last time I used it for some prime rib, I just got a very inconsistent and uneven cooking because of all the flare-ups from it not being cleaned.

                        I looked to YouTube for recommendations, but some of their items include a pressure washer and such. I don't think I'm going to go to such lengths, but we'll see where I go from here.

                          You suppose to clean a grill when it is warm. Take a steel grill brush to it and brush it. That is all it takes. I never saw a person using a pressure washer to clean a grill.

                            I do that every time before I cook (I get it up to 400 degrees for that). I don't just mean the grates, I'm talking about the stuff underneath it.

                              Some dish liquid, the one with degreaser in it and a steel wool pad will do the trick for the stuff underneath it.
